Every girl meets the situation when after a movie or a spectacle you come back home with your bf - already very hungry and the awful hunger spoils all the romance of the evening. We collected six quick and easy recipes for two to save you from this awkward situation!

Cheesesteak Pierogies

Ingredients:

  • Package frozen potato and Cheddar pierogis
  • 2 teaspoons vegetable oil, divided
  • 2 bell peppers (1 red, 1 green), sliced
  • 1 large onion, sliced
  • 1/2 teaspoon salt, divided
  • 1 pound boneless sirloin or flank steak, thinly sliced (see Note)
  • 1/4 teaspoon black pepper
  • 2 cups (8 ounces) shredded Cheddar cheese.

Procedure:

  • Boil the Pierogies for around 20 minutes then drain it out.
  • Over medium heat, place one teaspoon of olive oil in a large skillet.
  • Add onion, pepper and a quarter teaspoon salt and allow to cook for approximately 6 minutes. Stirring periodically.
  • Add vegetables to the Pierogies and mix gently
  • Heat remaining 1 teaspoon oil in skillet. Add steak, remaining 1/4 teaspoon salt, and the pepper. Cook until lightly browned.
  • Return pierogies and vegetables to skillet; toss with steak.
  • Sprinkle with cheese, cover, remove from heat, and let stand 3 to 5 minutes, just until cheese begins to melt.

Serves: 2

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 3 tablespoons olive oil, divided
  • salt, to taste
  • pepper, to taste
  • 1/2 lemon, zested
  • 1 clove garlic, grated
  • 1 tablespoon fresh rosemary
  • 1 tablespoon chopped fresh parsley
  • 2 tablespoons all-purpose flour
  • 1 shallot, thinly sliced
  • 1/2 lemon, juiced
  • 1/2 cup dry white wine
  • 1 teaspoon Dijon mustard

Procedure:

  • Pound chicken breasts to 1/2-inch thickness using a flat bottomed pan. Ensure that you wrap the chicken with a plastic bag or waxed paper
  • In a bowl, top chicken breasts with 1 tbsp. oil, salt, pepper, lemon zest, garlic, rosemary, and parsley; place in fridge for at least 40 minutes or overnight.
  • Lightly dredge the chicken breasts in flour and allow to dry for 2-3 minutes
  • Heat 1 table spoon of oil over medium heat; cook chicken breasts for 3-5 minutes per side or until chicken is nicely browned and cooked through. Remove chicken from pan.
  • In same pan, add 1 table spoon of olive oil. Cook shallot for a minute or until soft, but not brown. Add lemon juice, white wine, and mustard; cook for 2-3 minutes until slightly reduced.
  • Plate the chicken breasts and top with sauce.

Five Minute Chicken

Ingredients:

  • 1 (2-1/2 to 3-pound) chicken, cut into 8 pieces
  • 1 cup mayonnaise
  • 1 (11-ounce) can Cheddar cheese soup
  • 1 (4-ounce) can sliced or button mushrooms
  • 1/2 cup dry white wine
  • 1 garlic clove, crushed
  • 1 tablespoon dried parsley
  • 1 teaspoon curry powder
  • Salt to taste
  • Black pepper to taste
  • Paprika for garnish

Procedure:

  • Preheat the oven to 350 degrees.
  • Coat a 9- x 13-inch baking dish with cooking spray
  • Arrange chicken pieces in baking dish; set aside.
  • In a medium bowl, mix together mayonnaise, soup, mushrooms, garlic, parsley, wine, curry powder, salt, and pepper; pour mixture over chicken.
  • Bake 1 to 1-1/4 hours, or until done. Sprinkle with paprika just before serving.

Garlicky Steak

  • 2 (12-ounce) T-bone steaks
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 stick butter
  • 1 tablespoon chopped fresh garlic
  • 1 tablespoon fresh parsley

Procedure:

  • Soak the steak with salt and water on both sides.
  • With a large pan, over medium heat, brown the steak on both sides for approximately 3 minutes per side.
  • Remove pan from heat. Add butter, garlic, and parsley. Cook steaks 1 to 2 more minutes per side, or until desired doneness. Then serve immediately.

Mashed Potatoes

Ingredients:

  • One and a quarter pounds Idaho baking potatoes, peeled, cut into chunks
  • 2 tablespoons butter, softened
  • 2 tablespoons milk
  • 1/2 teaspoon salt
  • Pinch of black pepper

Procedure:

  • Place peeled potatoes on a saucepan and add enough water to cover
  • Allow to boil until soft and ensure that you drain off all the water
  • Add remaining ingredients and beat with an electric mixer until smooth and creamy. Serve immediately.

Serves: 2

Roasted Spring Vegetables

Ingredients:

  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 ounces asparagus, washed, trimmed, and cut into 2-inch pieces
  • 8 radishes, washed, trimmed, and cut in half
  • 3 ears fresh corn, cut into 1-inch chunks
  • 1 tablespoon chopped fresh dill

Procedure:

  • Preheat oven to 400 degrees F. Coat a baking sheet with cooking spray.
  • In a large bowl, combine olive oil, garlic, salt, and pepper; mix well. Add vegetables to mixture and toss until evenly coated. Spread in a single layer on prepared baking sheet
  • Bake for around 25 to 30 minutes, or until veggies start to brown. Sprinkle with dill and serve.
